Chia Pudding

Have you had chia pudding yet? It’s the same tiny black chia seeds that are used for those crazy haired Chia Pets. Did you know that chia seeds are extremely healthy? They are low in calorie, high in fiber, high in essential fatty acids, high in protein… Do a search on chia benefits for more information on this wonder food.

I love chia because it tastes like pudding if you don’t chew it. It absorbs up to 10x its size in liquid, so it plumps up a similar to tapioca, but has a smooth texture on the tongue. If you add raw cacao, cocoa powder or chocolate syrup, chocolate chia pudding tastes great. Vanilla is excellent too. I use coconut milk beverage, so mine is sweet and with a touch of coconut flavor.

Chia Pudding

Serves 2

  • 2 tbsp organic chia seeds
  • 2 C nut milk or liquid of choice
  • sweetener of choice
  • flavorings (cocoa powder, vanilla extract, cinnamon, or other flavoring)

I like to use a mason jar to make my chia pudding. Use a pint mason jar or other glass container with lid. Pour chia seeds into jar. Cover with liquid of choice, but just to cover seeds. Stir chia in liquid until well mixed. Add the rest of liquid and stir again until well combined. You can see how well you did with mixing if you look at the side of the container. A wire whisk is an easy way to ensure it’s well mixed. Then add your sweetener and flavorings and store in the refrigerator. It will take about 8 hours to absorb the liquid. If it is too thick after 8 hours, just add some more liquid.

I do not recommend using dairy milk. I tried it once expecting it to taste even more like pudding, but was very disappointed. I think it is too thick for the chia to absorb enough liquid. Nut milks work best. You could try using water for your initial mixing with chia and let it absorb the water for a few hours and then top off with milk. That would thin out the mixture, but still have the milk flavor.
