Raw Broccoli Salad

What’s raw about this broccoli salad? I used raw mayonnaise made with cashews and made carrot bacon instead of real bacon. Combined with broccoli, onions, sunflower seeds and raisins, this tastes very similar to the real stuff and is really good. My mom even likes it!

This broccoli salad sure makes transitioning to raw easy!

Raw Broccoli Salad

Serves 2

  • 1 head broccoli
  • 1/4 C finely chopped onion
  • 3/4 C raisins
  • 2 carrots
  • 3/4 C mayonnaise, raw or regular
  • Garlic powder
  • Paprika
  • Maple syrup
  • Salt

The carrot bacon needs to be prepared first. Slice carrots vertically or use a mandolin. On a plate, sprinkle salt, garlic powder, paprika with a drop of maple syrup and a drizzle of olive oil over the carrots. Thoroughly coat carrots with spice mixture.

In a 350 degree oven, place carrots on a cookie sheet. In about 10 minutes, the carrots will crinkle. Turn the over and reduce temperature to 250. Turn again if necessary. Carrots will shrink up and dry out and resemble cooked bacon. Keep an eye on them so they don’t get too crispy. Crumble.

Next, cut broccoli into small, bite sized pieces and put in medium sized bowl. Add raisins, chopped onions and sunflower seeds and mix well. Then add mayonnaise and mix well.
